Life Effige: mapping environmental impact in school food service

By participating in the European Life Effige project, Camst group has tested a methodology promoted by the European Commission, the PEF "Product Environmental Footprint" method, which aims to effectively and transparently measure its environmental footprint.

The initiative was promoted by the Institute of Management of the Scuola Superiore Sant’Anna in Pisa, which served as the project’s coordinator and technical partner along with Enea, the National Agency for New Technologies, Energy and Sustainable Economic Development.

Camst was the first catering company in Europe to initiate this pilot experience, which resulted in calculating the environmental impact of a school food service at all stages: from the selection of raw materials to their processing, through the definition of the menus to the creation of the dishes and their distribution in the school refectories.

With the technical support of its spin-off Ecoinnovazione, Enea’s elaboration of the study made it possible to develop the “Product Environmental Footprint” environmental impact measurement for a specific product category, namely a school meal conveyed and produced by a Camst cooking center.

The project also involved three suppliers of raw materials used by Camst and, therefore, representative of the school catering supply chain, reinforcing the idea of how crucial the involvement of actors in the food supply chain is in order to foster sustainable development through collaboration.
